
Ingredients:
8 fresh mint leaves
1 1/2 Tbs. simple syrup ( see related recipe at bottom)
1 Tbs. fresh lime juice
Crush ice as needed
2 oz light rum
2 oz club soda
1 lime wedge
Serve 1
Directions:
Put the mint leaves in the bottom of a glass. Add the simple syrup and lime juice and muddle well. Fill the glass with crushed ice. Add the rum and club soda and stir briefly. Add the lime wedge.
Simple Syrup recipe
Ingredient
1 cup of water
1 cup of sugar
Directions:
In a small sauce pan over medium heat, bring the water to a simmer. Add the sugar and stir until it completely dissolves. Remove the pan from the heat and set aside to cool to room temperature. Pour the syrup into a clean bottle, cap it and refrigerate until ready to use.
Note: You can keep 2 months or longer in the fridge.

I love this recipe, and Mojito`s are one of my favorites: they are not to sweet, but also aren`t purely based on mixing different alcoholic beverages.
