Kimchi Fried Rice + My Valentine's Weekend

You may remember this post and you've seen bits and pieces of saw the  ruffle cake and raspberry beer cocktail.  But here are the rest of the pictures for the dinner.  ( WARNING HEAVY PHOTOS AHEAD.)
Kimchi Fried Rice
1 tablespoon toasted sesame oil
1/2 cup finely chopped onions
pinch of coarse salt
1 cup of kimchi, coarsely chopped, plus 1/4 cup kimchi liquid
2 cups day-old cooked rice, at room temperature
Serve 2

Heat the sesame oil in a large nonstick skillet over medium-high heat.  Add the onions and salt.  Cook, stirring occasionally, until beginning to soften and brown, about 2 minutes.  Add the kimchi and cook for 1 minute to combine nicely with onion.  Add the rice and stir thoroughly to combine.  Cook until the rice is warmed through and beginning to brown, about 4 minutes.  Serve hot.

To make sunny-side eggs
Melt 2 tablespoons of butter in a nonstick pan  over medium heat.  Break open eggs into pan and immediately reduce heat to low.  Cook slowly until the whites are completely set and the yolks begins to thicken, but are not hard.  Serve eggs immediately and enjoy!

This recipe couldn't be simpler.  It's one of the best ways to use leftover rice.

The Kimchi fried rice sounds delicious (even though I generally will not eat rice) and love the presentation with the egg. Now, you ARE going to share the recipe for Thai chicken pizza, RIGHT?! ;) I'm still drooling...

Kimchi is really the talk of the town this past few weeks...We love Kimchi too.
