Honey garlic chicken wings

Looking for an easy chicken recipe that would be a great alternative to your typical buffalo wings? Well you're in the right place! Here's my super easy/tasty honey garlic chicken wings recipe.  This simple to cook chicken recipe is ideal for appetizer, or even main course!

Ingredients
1 pound chicken wings
4 cloves of garlic, finely chopped
2 tablespoons of soy sauce
3 tablespoons honey
1 tablespoon freshly grated ginger
1/2 teaspoon of salt

Method
Rinse chicken wings and pat dry with paper towels.  Remove and discard the tip of each wing. Cut them in half at the joint.
In a large oven safe baking dish add the wings in soy sauce, ginger, honey and salt.  Marinate for 1 hour in the fridge.
Preheat oven 425F.  Bake them in the oven for 30 minutes or until brown.  Don't forget to turn them over halfway through baking.  Remove the wings from the oven once they are cooked.  Serve hot.

Rau muong xao toi( Stir-fried water spinach and garlic)

Ingredients
2 tablespoons vegetable oil
1 bunch water spinach, (water spinach has long, arrow-shaped leaves.  The stem has segments just remove the bottom few inches of stem.  Separate the rest into 3-4 inches segments.  )
4 cloves of garlic, peeled and minced (More Garlic More Better!) 
1 tablespoons fish sauce
3/4 teaspoon sugar
1 fresh red bird’s eye chili pepper, minced( optional)
Makes 4 servings

Method
Wash water spinach and set aside.  In a large pan fill about 5 cups of water and bring to boil.  Add water spinach and stemmed for 1 minute, remove and blanched in ice water bath.  Squeeze gently to remove the access water, set aside.  In a wok, heat the oil over medium-high heat until hot and stir-fry the garlic  and chili pepper for about 1 minute for until fragrant .  Add the water spinach, fish sauce, sugar  and stir-fry for 1 minute .  Toss constantly, using chopsticks, keeping the leaves and garlic moving to prevent the garlic from burning.  Continue stir-frying for 1-2 more minutes .   The leaves will give off quite a bit of liquid. Taste for seasoning. Transfer to a serving plate.  That's it ! Serve with rice.

Lychee Mojito


I love to make mojitos and this is one of my new favorite summer drink.  This drink is unique because its a combination of Asian and Cuban flavors.
Printable Recipe
Ingredients
12 fresh mint leaves
1/2 tsp superfine sugar
1/2 oz simple syrup( prepared by bringing equal parts sugar and water to boil until the sugar dissolves; then chill.
2-3 fresh lychees or canned ( can be purchased at Asian markets)
1 ounce lychee juice
1/2 ounce fresh lime juice
2 ounces good quality gin
club soda, or sparkling water
ice
Makes 1 serving

Method
Muddle the sugar, mint leaves and 2 lychees in a highball glass.  Add crushed ice, simple syrup,  lime juice, lychee juice and gin.  Stir gently and top with club soda or sparkling water to taste.  Garnish with fresh lychee.

The lychee mojito is sweet and fruity, as opposed to just minty. Once you taste it, you will definitely come back for more :)

To chop, or not to chop?

Today the weatherman is forecasting a sweaty and humid over 100 degrees.  Ugh, I'm ready for this week to be over.  On a different note, I'm looking forward to get my haircut Sunday courtesy of my SIL, Kim. ( and what better time for a hair makeover than summer?) I haven't  had a haircut since January.  Gross, I know right?  After years and years of wearing my hair in long layers I don't know if I should chop it  or keep it long again.  I can't decide, I'm so torn, any thoughts are welcome!

Something New

I have lusted over this Michael Kors runway rose gold watch for a while now and finally got it last week...actually, requested J to get it for me since I had a 30% coupon. LOL
I personally do not wear or even own any yellow gold jewelry, so when this new rose gold came out, I was hooked.  I wear it almost 90% of the time now. haha

Banh Mi- Vietnamese Grilled Pork Sandwich

I have a lot of favorite sandwiches, however B├ính Mi has got to be up the top of the list.  If you haven’t tried Vietnamese banh mi by now, you’ve been missing out on a truly remarkable sandwich.  Vietnamese sandwich is a perfect combination of flavors and textures in every bite.  The pork is marinated in lemongrass and fish sauce, while the carrots and daikon are pickled in rice vinegar and sugar.  Freshness from cilantro and cucumber bring a clean and refreshing element.  And creaminess of mayo with the fiery kick of serrano pepper will tickle your taste buds.  What more could you possibly want out of a sandwich!

Ingredients for Grilled Pork Ba'nh Mi Sandwich:
Vietnamese individual-sized baguette bread or regular French baguette bread
Vietnamese lemongrass grilled pork ( see recipe below)
Cucumbers, thinly sliced
Cilantro
Serrano or Jalapeno pepper, thinly sliced
A few dashes of soy sauce, to taste
Spicy mayonnaise. optional ( see recipe below)
Pickled carrots and daikon
Sunny-Side up eggs ( optional)
Directions:
1. Begin by making your pickling mixture. You can do this ahead of time. Drain well before using on sandwiches.
2. Slice the baguettes open lengthwise, leaving one side of the bread as a hinge. 
3. Spread the inside of each baguette with mayo. Add layers of meat, put in the toaster oven for about 5 minutes. 
4. Then add pickled carrots and daikon, cucumbers, cilantro sprigs, Serrano peppers and sunny-side up egg. Sprinkle with soy sauce and serve.

Spicy Mayo:
1/4 cup mayo
1 tbsp sriracha sauce
*To make the Sriracha mayo, mix together the mayonnaise and Sriracha in a small bowl and set aside
Vietnamese Lemongrass Grilled Pork:
4 slices center-cut pork chops, bone in
2 stalks fresh lemongrass, minced
2 clove garlic, minced
1 tbsp light brown sugar
1 tbsp fish sauce
Kosher salt and black pepper to taste
Drizzle of sesame oil
*Marinate pork chops with all ingredients for 2-4 hours. Grilled over hot charcoal, or oven broiler.

Vietnamese Pickled Carrots + Daikon

Happy Monday guys!! I hope you all had a beautiful weekend.  Sorry for not being able to post anything new for a week now.  Life's been a little crazy in my corner so, in the meantime, please enjoy this quick Vietnamese pickled carrots and daikon.  Enjoy your day  y'all. XO

This lightly picked condiment can be served on it own as a palate-refreshing side salad as well as on sandwiches.  Check back tomorrow for my take on Vietnamese Banh Mi sandwich recipe.

Ingredients:
1/2 pound carrots, peeled and sliced crosswise 1 1/2 inch long  matchstick
1/2 pound daikon, peeled and cut into 1 1/2 long matchstick
1  cup luke warm water
1/4 cup rice vinegar
2 tablespoons sugar
2 tablespoons kosher salt
Makes 2 cups

Directions:
1. Put water, rice vinegar, sugar and salt in a pitcher or bowl and whisk until sugar is dissolves.
2. Peel, wash and cut carrots and daikon to desired size. Combine both together in a bowl.
3. Fill carrot and daikon into a tight lid jar or similar container and cover with the pickling liquid.
4. Let pickle for at least 1 hour before serving and store in the fridge for up to a week.

Baked Rice Pudding, Thai Style

Black glutinous rice, also known as black sticky rice, has a long dark grains and a nutty taste reminiscent of wild rice.  It has a distinct  flavor.  This is definitely one of favorite hot desserts to make.  Bake these for 35-60 minutes and you'll enjoying them in no time.

Ingredients
1 cup  white or black glutinous rice
2 tbsp soft light brown sugar
2 cups reduced-fat coconut milk
1cup water
3 eggs
2 tbsp granulated sugar
Serves 6

Directions
Combine the glutinous rice and brown sugar in a pan.  Pour in half the coconut milk and water.
Bring to the boil, reduce the heat to low and simmer, stirring occasionally, for 15-20 minutes, or until the rice has absorbed most of the liquid. Preheat the over to 300F.
Spoon the mixture into a large ovenproof dish or individual ramekins.  Beat the eggs with the remaining coconut milk and sugar in a bowl.
Strain the egg mixture into a pitcher, then pour it evenly over the par-cooked rice in the dish or ramekins.
Place the dish or ramekins in a roasting pan.  Carefully pour in enough hot water to halfway up the sides of the dish or ramekins.
Cover with foil and bake for about 35-60 minutes, or until the custard has set. Serve warm or cold.

Master Bedroom Makeover Reveal!!!

Hope everyone had a wonderful long weekend.

Last Wednesday, I shared with you a sneak peek of a recently completed master bedroom makeover...and today, I'm going to share it with you! For the past 3 months I have been decorating, painting, bugging John to help.  Shopping, more shopping and returning half of  everything I buy, I am finally going to show you our bedroom, its done! And we love it!  This is now my favorite room in the house and currently the only clean room in the house. ( We moved in our house 3 years ago this July).

The pictures say it all, clean, simple, relaxing and everything that we were going for.  But to really appreciated what was done here, I suppose the before picture is a MUST.
