Orange-Honey Madeleines and 100th Posts Giveaway

Printable Recipe
3/4 cup all-purpose flour
1/2 tsp. baking powder
1/8 tsp. kosher salt
2 large eggs
1/3 cup of sugar
2 Tbsp. honey
2 tsp. vanilla extract
1/2 tsp. finely grated orange zest
5 Tbsp. unsalted butter, melted, cooled, plus more for molds
madeleine pan
Sift flour, baking powder, and salt into a bowl. Using an electric mixer , beat eggs and sugar until pale yellow and thick, about 3-4 minutes. Beat in honey, vanilla, and orange zest. Carefully fold in dry ingredients. Add melted butter; gently fold into the batter. Press plastic wrap directly onto surface of batter; chill for at least 3 hours or can be made 1 day ahead.
Position rack in center of oven and preheat to 400F. Lightly brush madeleine molds with butter. Drop 1 tablespoon batter into each mold. Bake until golden brown and a tester inserted into center comes out clean, about 8-10 minutes.
Remove pan from oven, invert, and quickly knock madeleines out of pan. Serve with coffee or  tea.
Hi everybody! I cannot believe this is my 100th posts and my blog has hit over 100000 page views! Honestly, I can't believe it! How the heck did that happen? It seems like just a short time ago that I started A cup of Mai.    I am shocked that people are enjoying my blog, it means a lot to me to have found this online community that shares the same food/fashion/decor obsession with me and it has been more than a pleasure interacting with you guys.  Thanks to all my blogger friends and my sister for their wonderful comments and encouragement.  I am already looking forward to my 200th milestone.
In honor of my 100th post I am giving away a little something for both foodie and fashion bloggers.

2. Dior mascara ( I picked it up from Sephora last week and now I'm hooked. Its absolutely gorgeous on)

i love madeleines! i'm eating one as im typing this comment -- seriously! i love baking and this doesn't seem THAT hard. i might give this a try. the other day, i tried making your spare ribs and i couldn't get it to caramelize! i think i have that issue with another recipes -- the chicken wings. i wonder what i'm doing wrong?!

Hi Ping!

Aww, I'm sorry ! My friend just made this yesterday and they turned out great. Hmmmm sometime it might be the oven temperature not hot enough. Its always nice to invest an oven thermometer. Also if you bake for 30 minutes and it still not brown bake for another 5-10 minutes at 425F.
As for the spare ribs make sure the oil is hot ( on high heat) and add sugar regular or brown sugar stir until sugar is brown. Also if you want it to really caramelized use dark soy sauce. Hope this helps!

My mom never baked when I was a child, so I never developed a taste for sweets or baked goods. Though I eat it now. Next time I have to go to a potluck, I will try making these. Gonna pin it.

YUM! I always buy the madeleine cakes from Starbucks because they taste wonderful with my coffee. I've always wanted to try making my own but can't seem to find a great recipe. This one looks amazing though especially with the orange-honey combo!! I will soon attempt to make some little madeleines of my own! Thanks!

These madeleines look phenomenal - I love the caramelization along the ridges. And the dishes you use in your photos are beautiful with the food.

I have yet to purchase a madeleine - I have resisted in the past because I've convinced myself I'm not likely to make these little delicacies frequently. But these pictures are awfully tempting!
