I love to make mojitos and this is one of my new favorite summer drink. This drink is unique because its a combination of Asian and Cuban flavors.

Ingredients
12 fresh mint leaves
1/2 tsp superfine sugar
1/2 oz simple syrup( prepared by bringing equal parts sugar and water to boil until the sugar dissolves; then chill.
2-3 fresh lychees or canned ( can be purchased at Asian markets)
1 ounce lychee juice
1/2 ounce fresh lime juice
2 ounces good quality gin
club soda, or sparkling water
ice
Makes 1 serving
Method
Muddle the sugar, mint leaves and 2 lychees in a highball glass. Add crushed ice, simple syrup, lime juice, lychee juice and gin. Stir gently and top with club soda or sparkling water to taste. Garnish with fresh lychee.
The lychee mojito is sweet and fruity, as opposed to just minty. Once you taste it, you will definitely come back for more :)

Mai,I'm upset because lychees are not in season right now. Can you think or suggest some other fruits as a substitute for this?

@ DP- canned lychee can purchase at most asian markets available all year round....or you can replace lychee with raspberry or strawberry for these :)
